If you use 1 cup o...Hi - That's exactly right. If you use 1 cup of Rice flour and 1 cup of Sorghum, you would use 1/2 cup of Potato starch and Tapioca starch/flour. That's a 2 to 1 ratio. Those amounts specifically would give you 3 cups of GF flour to use.<br /><br />You can try arrowroot flour in place of the Tapioca - I think it would work out the same. Do you mean what ever quantity or rice and sorghum flours you use then you do half that of potato starch and half that again for tapioca starch?
